There are many options for cooking the famous Olivier New Year’s salad. But its author – Lucien Olivier – did not share the recipe with anyone. So fans of the dish started inventing their own versions of what should be there. We’ve put together three simple, non-trivial ways to cook it for you and your guests to enjoy.

Olivier with chicken and baked vegetables

The main winter salad is, of course, Olivier. We prepare it every year for the New Year or just as a gift for the guests. Simply put, there is no complete vacation without this dish. Everyone prepares the olive tree in their own way: some do not put carrots, some add an apple, and some instead of peas – corn. We suggest you cook this salad in a completely different way, using baked vegetables and chicken fillet. Believe me, it will be very tasty!

Ingredients:

  • chicken fillet – 1 unit. (if small, then 2)
  • carrots – 2–3 pieces.
  • potatoes – 4 quantities
  • pickle – 4-5 pieces.
  • eggs – 4-5 pieces.
  • frozen peas
  • homemade mayonnaise
  • swan salt
  • a mixture of peppers

A real olive recipe

In one of the first versions, published in the magazine “Our Food”, it was noted that potatoes, fresh cucumbers, fried urollos, capers, olives were previously added to the salad. Provencal and Kabul sauces were used for dressing.

This salad takes us back to the days of the “real” Olivier. It is true that instead of prawns in this olive grove there are no prawns and howls, but whatever you do, those times will not return.

Ingredients:

  • 10 g carrots
  • 10 g of boiled potatoes
  • 10 g of boiled green peas
  • 2 quail eggs, peeled and sliced
  • 15 g of smoked beef tongue, diced
  • 15 g sliced ​​cocktail prawns
  • 10 g of grated Parmesan cheese
  • 40 g of avocado pulp
  • 1 teaspoon. fresh lemon juice
  • salt, fresh thyme and ground black pepper to taste

For decoration:

  • 1 radicchio salad leaf
  • 1 gambeta 16/20
  • 1 chive arrow
  • 1 teaspoon. red caviar
