Belyashi recipe with kefir: how to cook delicious yeast dough

Ingredients for the dough: Kefir 1% (450 g), instant dry yeast (1 sachet = 11 g), sugar (1-1.5 cups), salt (0.5 teaspoons), oil (2-3 cups), flour 500 g).

Ingredients for the filling: minced meat (500 g), onion (2-3 pieces), water or broth (4-5 tablespoons L.), salt, pepper.



In a small skillet, heat the kefir, mix it with sugar and dry yeast, which dissolves quickly. Stir and wait until steam is adequate for 5-10 minutes in a warm place.

Sift the flour through a sieve into a deep bowl. To a part of the sifted flour add the prepared puree, the salt, the oil. Mix and knead the dough first with a spoon, and then, adding flour, knead by hand. It should be smooth and even. Then cover the bowl with a towel and leave it for 1 hour in a warm place with no drafts.

After this time, sauté the dough and let it rest for another half hour.

In the meantime, let’s prepare the filling: wash the meat with running water, cut and pass through a meat grinder. Peel an onion and grate it or pass it through a meat grinder. Combine minced meat, onion and a few tablespoons of broth or water; this is necessary for the filling to be juicy. Salt and pepper to taste, stir.

Divide the finished dough into 10-12 parts. We roll each one into a ball, and in turn we straighten it into a cake. Note that its edges should be thinner than the center. The minced meat is also divided into 10-12 parts so that the meat in the egg whites is uniform.

Place the minced meat in the center of each cake. Gather the edges of the dough over the filling, pinching the folds around the finger and leaving a small hole in the middle. Then lightly flatten the finished whites with the palm of your hand and cover with cling film, let stand for 10 minutes.

Heat a frying pan with plenty of vegetable oil. To make the filling juicy, you can add a little butter or oil during frying.
