Chanahi recipe: how to cook in a pan with meat and beans

Chanahi is a dish of Georgian cuisine, which is lamb stewed in a clay pot with spices and vegetables: potatoes, tomatoes, aubergines and onions. It is often made in western Ukraine, for example, the Lviv version of this dish is prepared with meat and beans.

Ingredients: pork or lamb (700 g), potatoes (600 g), onion (1 piece), carrots (1 piece), red beans (1 cup), garlic (7 grains), tomato paste (1 tablespoon), lard (2 tbsp L.), flour (4 tbsp L.), bay leaf (1 unit), salt, ground black pepper, parsley, oil, ground red pepper.



The red beans should be soaked overnight and then cooked until cooked through: it will take about 1-2 hours.

Wash onions and carrots with running water, clean. Cut the onion into small cubes and grate the carrots.

Peel a squash, grate it and squeeze the juice. Heat a frying pan with oil and fry the potatoes until almost done, then transfer to a plate.

Wash the pork, cut it into clean pieces and put it in a hot pan and fry over high heat on all sides, stirring occasionally. Then add the lard, onion and carrots. Cook everything together for about 10-15 minutes, don’t forget to stir so that nothing burns.

Then add the tomato paste or, if available, finely chopped tomatoes. Cook for another 5-20 minutes.

The garlic is cleaned and cut with a knife or passed through a press. Wash the parsley under water, spread it on paper towels to absorb excess moisture. Finely chop it.

Take a large saucepan, pour 3 liters of clean water and put it on high heat. Pour in the fries and boiled beans. Wait until the water boils, then send the fried vegetables with meat. Also add chopped vegetables, garlic, bay leaf, salt, paprika and other spices to taste. Bake together for another 10 minutes.

Meanwhile, fry the flour in a dry pan until golden. Add 1-2 tablespoons of broth, stir to prevent lumps. Pour the flour mixture over the rest of the ingredients in a saucepan, stir and simmer for about 5 minutes. Then pour them into plates or clay pots.
