Galician dishes. Banosh, bograch and holiday cake recipes

We tell you how to cook traditional western dishes.

Although most Ukrainian dishes are equally popular in both eastern and western Ukraine, some Galician dishes are quite special. They are multicomponent and therefore rich in flavor. We share recipes for three traditional dishes from this region: banosh, bograch and Galician bread.

Banosh is a cornmeal cooked with milk or sour cream, traditionally served with cheese.

Banosha recipe with mushrooms

Ingredients:

  • corn grain – 150 g
  • Milk – 450 ml
  • Mushrooms – 100−150 g
  • apple cider vinegar (or vi) – 100 ml
  • Onion – ½ – 1 unit
  • Water – 200 ml
  • Butter – 20 g
  • Vegetable oil – 1 tbsp. l.
  • Sour cream – 1 tbsp. l.
  • Hard cheese – 50 g
  • Salt and pepper – to taste

Carpathian banosh recipe

Ingredients:

  • 120 g of medium-sized cornmeal
  • 500-700 g of medium cream or cream with fat
  • 500 ml of water
  • 200 g of mushrooms
  • 250 g of Hutsul sheep bryndza
  • 1 tbsp. vegetable oil
  • 1 tbsp. butter
  • salt, black pepper to taste

Bograch is a rich soup with various types of meat, peppers, tomatoes and other vegetables. Initially, the dish is Hungarian, but it has gained great popularity in the Transcarpathian region.

Hungarian bograch recipe

Ingredients for the broth:

  • Chicken joints – 1 kg
  • Beef hooves and tails – 1 kg
  • Pig hooves and tails – 1 kg
  • Bay leaf – 5 pieces.
  • Juniper berries – 20 pieces.
  • Carnation – 10 pieces.
  • Black pepper – 10 pieces.
  • A sprig of thyme and parsley

Ingredients for bograch:

  • Onions – 3 quantities
  • Carrots – 2 pieces.
  • Parsley root – 1 unit.
  • Parsley root – 1 unit.
  • Celery root – 1 unit.
  • Bulgarian pepper – 5 quantities
  • Tomatoes – 500 g
  • Pepper – 1 unit.
  • All – 1 cap
  • Potatoes – 5 pieces.
  • Bone pork – 300 g
  • lard – 200 g
  • Shovdar – 200 g
  • Several branches of coriander, parsley
  • Dried chili, sugar, pepper, salt to taste
  • A few grams of coriander, paprika, juniper seeds

Hutsul Bograch recipe

Ingredients:

  • Onions – 100 g
  • Bacon – 250 g
  • Beef fillet – 250 g
  • Red pepper – 3 g
  • carrots – 150 g
  • Chicken broth – 250 g
  • Baked and peeled peppers – 1 unit.
  • Potatoes – 150 g
  • Chile – 1 quantity (Taste)
  • Garlic – 2 large grains
  • Boiled beans – 300 g
  • Chopped canned tomatoes – 150 g
  • Dough balls – 200−250 g
  • parsley – 3 g
  • Olive oil – 30 g

For dough balls:

  • Rovells – 2 pieces.
  • Flour – 70 g
  • Milk – 70 g

Classic poppy seed cake recipe

Ingredients:

Too:

  • 100 g butter
  • 3 egg yolks
  • 200 g of flour

Poppy layer:

  • 200 g of grated apples
  • 125 g of ground poppy seeds
  • 3r. tablespoons semolina
  • 3 eggs
  • 150 g of sugar
  • 75 g butter
  • 1.5 teaspoons of powdered yeast

Cheese layer:

  • 400 g of sour milk cheese
  • 1 pudding item
  • 3 eggs
  • 150 g of sugar

Optional

Nuts:

  • 200 g butter
  • 150 g of chopped nuts
  • 4 tbsp. powdered sugar
  • Art. milk

Cherry layer:

  • 330 g of plum jam
  • 1r. frozen pitted cherries

Gelatin Ball:

  • 500-700 g of frozen berries
  • 2 уп. gelatin
  • 200-250 ml of fruit juice

Cake recipe «Miracle in the eggs »

Ingredients:

The first dough:

  • 5 eggs
  • 200 g of sugar
  • 200 g of flour (about 7 tablespoons)
  • 3 tbsp. starch
  • 2 teaspoons baking powder
  • 4 tbsp. vinegar

Second mass:

  • 2 eggs
  • 1r. sugar
  • 1r. cream
  • 2 st. Poppy
  • 200 g of flour
  • 1 teaspoon soda

Cream:

  • 300 g of oil
  • 1 can of condensed milk
  • 1 orange

Cake recipe «Chickens in the decree “

Ingredients:

  • 500 g of flour
  • 2 eggs
  • 120 g of oil 82%
  • 150 g of sugar
  • 150 ml of cream
  • 3r. cocoa powder
  • 1 teaspoon. except powder
  • 0.5 teaspoons. soda

For burning:

  • 1 liter of milk
  • 2 eggs
  • 350 g of oil
  • 300 g of sugar
  • 15 g of vanilla sugar
  • 3r. rom o brandi
  • 5 st. corn starch
  • 4 st. flour
  • 12 halves of canned peaches
