Soba – a recipe for buckwheat noodles with chicken and vegetables

Soba is a noodle that is prepared with the addition of buckwheat flour. It is very popular in Japanese cuisine. We offer to cook it because it is simple and delicious. And, unfortunately or fortunately, not so exotic. Rather it adapts to our realities.

Ingredients (4 servings)

  • soba (buckwheat noodles) 200 gr.
  • chicken fillet 300 gr.
  • zucchini (average) 0.5 units.
  • sweet pepper 1 unit.
  • carrots 1 unit.
  • onion 1 pc.
  • garlic 2 grains.
  • oil 2 tbsp. l.
  • 2 tablespoons soy sauce. l.
  • honey 1 2 tbsp. l.
  • starch 1 tbsp. l.
  • salt to taste
  • sesame (to serve) 1 tbsp. l.
  • vegetables (to serve) 1 tbsp. l.

Let’s start with the fact that this dish can have many combinations. You can change the amount of ingredients in favor of vegetables or meat. You also need to leave onions and carrots, but other vegetables can be mixed to taste and depending on the season. You can add broccoli, eggplant, cauliflower and more. We have given the most common combination. You also have to be careful with the salt, because the soy sauce is already quite salty.

The dish is quickly prepared in the style of the stir-fry: a quick frying of meat and / or vegetables in a hot pan with the addition of oil. Therefore, the thinner the ingredients are cut, the faster and more evenly they will cook.

In parallel with the preparation of vegetables and meat, boil the noodles with plenty of water.

Chicken fillet cut into thin strips. Zucchini, peppers and carrots cut into thin strips, onions into half rings. Finely chop the garlic with a knife.

Heat a deep frying pan well, add oil, heat. Put the fillet and fry for 2-3 minutes, without reducing the heat and cover with a lid. The meat must be stirred so that it is evenly browned. Add carrots. Fry with the meat for another 2 minutes. Then add the onions and peppers, fry, stirring, for another 1-2 minutes. Add the garlic and zucchini. Cook for another 2-3 minutes, stirring occasionally. As a result, the meat should be fully cooked and the vegetables should be slightly crispy.

During this time, the noodles had to be boiled, tossed in a colander and rinsed with cold water.

Mix the soy sauce and honey (you can use teriyaki sauce or replace the honey with brown sugar, and you can add ginger or pepper or sauce). Add starch and stir to prevent lumps.

In a skillet, add the noodles to the vegetables and meat, pour in the sauce and, stirring, cook for a couple more minutes. The sauce should be evenly distributed over all the components of the dish. Serve with sesame seeds and fresh herbs.
