Spartak cake recipe: how to cook with sour cream

Ingredients for cakes: flour (400 g), cocoa powder (4 tbsp), sugar (150 g), butter (100 g), eggs (2 tbsp), honey (4 tbsp), baking soda (1 tsp), yeast powder 1 teaspoon).

Ingredients for sour cream: sour cream 20-30% (350 g), sugar (130 g), vanilla sugar (10 g), egg (1 unit), starch (20 g), butter (200 g).

Preparation:

First, we make cakes. To do this, soften the butter; you can do this with a microwave or pre-expose it from the fridge.

Sift the flour through a sieve. In a large bowl, combine flour, cocoa powder, and yeast.

Heat the water in a large saucepan – this is what we need for the steam bath.

In a saucepan, mix less honey, butter and sugar. Place the casserole with the honey mixture in the steam bath and let it homogenize without stopping to stir.

In a separate bowl, beat two eggs. Then slowly pour them into the honey mixture, stirring constantly. Then add soda: the dough should increase in size immediately and foam will appear. Boil for about 10 minutes, then let cool for a few minutes.

Add this mixture to a bowl with sifted flour and cocoa, mix well with a spoon. Gradually the dough should thicken.

Then roll up the sausage and cut it into 8 pieces. Sprinkle them on a plate, cover with cling film; as such, they should rest for 15 minutes at room temperature and then another 15 minutes in the refrigerator.

Preheat oven to 180 ° C. Roll out the first portion of dough up to 2 mm thick on parchment paper, prick it with a fork and pass the dough with paper onto a baking tray. Bake the cake for about 6-8 minutes.

While the first cake is baking, do the same to prepare the next one.

Finished cakes should be cut into a special shape or pan lid.

Then we will prepare the cream. For the cream, mix the sour cream with sugar, vanilla sugar, egg, starch. Then put it in the steam bath. Stirring constantly, cook the cream until it thickens and then let it cool completely.

Beat the butter gently for 10 minutes with a whisk. After that, add the custard in portions and beat constantly with a blender.

For the chocolate glaze, melt a bar of chocolate and butter in a microwave oven in short pulses for 10-15 seconds, stirring the glaze each time.

We pick up a cake: we put a substrate or a plate, on it we spread the first cake, then a layer of sour cream, again a cake, cream, etc. Grease the sides of the cake as well. The last cake does not need to be spread with cream: pour chocolate icing. Send the cake for 6-8 hours in the fridge to soak.
