Wash the meat under running water, cut it and the diced lard – about 2.5 cm. Salt and pepper to taste. Place the meat and bay leaf in the lightly layered prepared pot. Cover the container with a lid, but do not turn.

Sprinkle the baking tray with plenty of salt. You can put them in the oven on a tray.

Turn on the oven and preheat to 180 ° C. Leave in this position for one hour, then reduce the temperature to 150 ° C and wait 3.5 hours.

Melt the butter over low heat. 2.5 kg will need about 0.5 liters of fat.

After opening the oven, turn off the pan, open the lids and pour, without reaching 2 cm to the neck, melted fat. Cook at the same temperature for another half hour.

Then carefully remove the stew jars, roll up the lids, and turn them upside down. Cover with a blanket, blanket or warm blanket and leave in this state until the stew has cooled.


Chicken stew in a multicooker

Ingredients: chicken (4 kg), salt (4 tsp), pepper (1 tbsp), bay leaf (8 units).


Disassemble the chicken: remove the skin, cut the bones, remove the film, cut into small pieces. Fill everything with salt water and leave for an hour. This will make the meat softer and the salt more even.

Then drain the water and transfer it to a multicooker. Close the lid and set the “Stew” mode for 3 hours.

After the specified time period, open the lid and add spices: salt, pepper peas and bay leaf. Cook for another hour.

Meanwhile, prepare the jars and lids. Benches are washed with baking soda in running water and then sterilized in the oven, steam bath, or microwave. Boil the lids in boiling water or cover them.

Decompose the hot meat into previously sterilized jars, roll with metal lids and turn upside down. Cover with a warm blanket and wait until cool.
