Vyshivanka cake recipe: how to cook a cake with poppy seeds and cocoa seeds

Ingredients for the dough: flour (500 g), 82% butter (250 g), sugar (200 g), yeast powder (18 g), egg yolks (3 units), sour cream 15% (60 g), cocoa (20 g) ).

Ingredients for stuffing poppy seeds: poppy seeds (250 g), protein (3 units), sugar (100 g).

Ingredients for the cheese filling: 9% cheese (1 kg), sugar (200 g), eggs (3 units), cornstarch (50 g), vanilla.

Ingredients for burning: 82% butter (250 g), boiled condensed milk (250 g), brandy (20 g), cocoa (10 g).

Ingredients for fondant: dark chocolate (100 g), cream 33% (100 g), nuts.

Preparation:

The butter is pre-cooled in the fridge. Carefully divide the eggs into egg whites and yolks.

In a deep bowl sift the flour with the yeast, then chop the cold butter. Crush everything into crumbs, add sugar, egg yolks and sour cream.

Divide the dough in half, pour the cocoa in half, mix. Divide each part into 2 more parts – 4 pieces of dough should come out, each wrapped in cling film. The parts of the dough without cocoa are removed in the fridge for 1 hour, and those with cocoa – for 30 minutes in the freezer, then for 30 minutes in the refrigerator.

While the dough cools, prepare the fillings. For the first one – poppy seeds – grind the poppy seeds until it is white, pour boiling water and let it infuse for 30-40 minutes, then press it. In a small bowl, beat the egg whites with the sugar until firm, then combine gently with a spatula with poppy seeds.

For the cheese filling, grind the cheese through a sieve, add sugar and eggs, mix well. Sift the starch through a sieve, add to the dough together with the vanilla.

Preheat oven to 180 ° C. The baking tray is lined with baking paper.

Spread a thick layer of light dough on the bottom, then half the cheese filling, then half the poppy seeds. Rub the dark dough on top. Bake in preheated oven for about 35 minutes. Cool for 20 minutes in the form, then remove and place on a cutting board. Repeat the same and bake the second cake.

When both cakes have cooled, start baking the cream. The butter is removed from the fridge beforehand to soften it. Then beat with a blender, add condensed milk, brandy, cocoa and mix until smooth.

We start to form a cake: we put all the cream on one of the cakes, spreading it evenly over the entire surface. Turn the second cake over and spread it over the first: too dark cream. Squeeze the sides with cling film and put the cake in the fridge for 2 hours.

To prepare the fondant, pour the cream into a small saucepan and bring to a boil. Remove from heat, add chopped chocolate, mix until smooth.

We grind nuts with a knife or roller.

Remove the cling film from the cooled cake, pour in the fondant on top and sprinkle with chopped nuts. Refrigerate for 6-8 hours to soak.

Serve the appetizing Vyshivanka cake, cut into portions, to make tea or coffee.
