  • Wheat flour – 1100 g / 7 cups (you need to adjust the amount of flour in the baking process, because each flour has its own absorption properties)
  • “Lviv yeast” pressed – 80 g
  • Sugar – 250 g
  • Salt – 1 tsp.
  • Butter – 250 g
  • Eggs – 4 pieces. + 1 egg yolk (medium size eggs)
  • Milk – 300-350 g
  • Pansies – 250 300 g
  • Vanilla sugar – 1 pack / 10 g
  • Cognac – 50 g
  • Lemon or orange peel – 10 g

Protein icing:

  • Protein 1 unit.
  • Powdered sugar 120−150 g
  • 1 tablespoon lemon juice. l.

Cooking process:

1. Half of the yeast (40 g) Dissolve hot (30−35 ° C) milk, add 500 g of sifted flour (it is necessary to adjust the amount of flour in the baking process, because each flour has its own absorption properties). Add the flour slowly starting at 200 g. Cover and let the dough ferment for an hour and a half.

2. Beat the eggs with the sugar and vanilla sugar. Add the lemon zest and the second half of the yeast to the mixture (40 d).

3. Wash the raisins, pour in the brandy, mix.

4. Add the remaining egg mixture, salt and flour to the dough (it is necessary to adjust the amount of flour during baking, because each flour has its own absorption properties) and knead the dough.

5. At the end, add the softened butter and raisins, knead very well. Cover, leave for an hour and a half.

6. Divide the dough into pieces, give it a round shape with a smooth surface and shape (paper or metal, covered with parchment). Fill out the forms with the dough 1/3 of the height. Cover, leave for an hour and a half for the dough to rise well.

7. Grease the top of the strips with beaten egg. Bake in the oven at 180-190 ° C for 30-60 minutes (depending on the weight of the product).

8. Decorate the Easter cake to your liking.
