Easter for Christians of the Western Rite (Catholic Easter) – April 17, and the Orthodox of the Eastern Rite in 2022 are celebrated a week later – on the 24th. On the eve of a brilliant holiday, we offer a recipe for baking, which is usually cooked in England: “cross” pasta. Many legends and beliefs are associated with it, for example, the cross on the surface symbolizes the crucifixion of Jesus Christ.
To make English rolls with a cross, you will need the following ingredients .
For the dough: milk (300 ml), butter (70 g), wheat flour (550 g), salt (1 tbsp), sugar (100 g), fresh yeast (20 g), egg (1 unit). ), raisins (80 g), candied fruit (50 g), rum (50 ml), orange (1 unit), apple (1 unit), ground cinnamon (1 teaspoon), ground ginger (1/2 teaspoon). ), ground key (1/2 teaspoon).
For cross and lubrication: egg (1 unit), water (4-5 tbsp), flour (70 g).
For enamel: apricot or orange jam (4 tbsp L.).
Pour boiling water over the raisins for five minutes, drain the water. Peel an orange, add it to the raisins and pour in the rum. Leave for 2-3 hours. Then drain the alcohol and set aside.
Bring the milk to a boil, remove from the heat, add the butter and pour into a large bowl where you will knead the dough. Cool slightly, add the yeast and mix well. Beat the egg, add flour, spices, sugar. Knead a homogeneous dough but quite sticky. Knead for about 5-8 minutes to increase its elasticity. Cover with cling film or a damp towel and let stand for an hour.
Then add the candied fruit to the dough with raisins and raisins, previously mixing them with flour, and grate the apple. Stir well again.
Divide dough into 15-20 parts, form into loaves. Place on a baking tray lined with baking paper. Cover with a damp towel and leave for another hour.
When the loaves increase in size, spread with egg. Mix the flour with water until it has a toothpaste consistency. Fill a pastry sleeve with the resulting mixture and draw a cross on each loaf. Send the cake to the preheated oven at 220 ° C and leave it for 20-30 minutes. The buns should brown well.
Heat the jam, strain it through a sieve and spread the finished buns with this sweet mixture. Serve hot.
