Birch sap is a drink that springs from the trunk of a tree, if you make a hole in it. It is believed that the main value is not in the juice itself, but in the product that results from fermentation. Our ancestors made a miraculous potion low in alcohol from the birch drink, which can strengthen health.

Doctors claim that the composition of birch sap is a unique vitamin bomb. This product is rich in vitamins – potassium, sodium, magnesium, calcium, ironcontains vitamins B12 and B1. It is indicated for people with gastric or duodenal ulcers, liver disease, gallbladder disease, arthritis, tuberculosis, rheumatism. In addition, birch sap perfectly strengthens the immune system and improves health.
The Slavs have long been preparing a natural cocktail from a natural drink: honey added, sometimes – milk, and exposed to the sun, waiting for fermentation. Then they drank it like kvass or mead; this helped prevent vitamin deficiency due to lack of nutrients during Lent.
Too bad birch sap insignificant, but obvious: not recommended for people with urolithiasis, as well as for people allergic to pollen.
When to collect birch sap in Ukraine
Experienced people say that in our latitudes you can start picking sap as soon as the tree shoots start to swell. The period is from late March to mid-April, by the end of the month the birch leaves are already blooming and then the juice cannot be extracted.

From one birch a day you can get 2-3 liters of juice, and if the tree is large, the amount doubles. It is highly recommended not to take all the birch juice, so as not to damage the plant.
Important rules for collecting birch sap:
- the minimum volume of a tree trunk should be 25-30 cm;
- in any case it is impossible to extract juice from young birches;
- obviate the tree that grows near the city, industrial enterprises and roads;
- pierce the trunk with a punch and see what will be – the presence of a drop – a green light to collect the juice;
- the best time to extract the juice is from 10:00 to 18:00.
To pick up the drink and not damage the tree, drill or drill a small hole in the trunk at an angle of 35-40 ° C. Then insert a thin tube (preferably metal) through which the juice will flow. At the end of the procedure, cover the hole with wax, household soap or moss.
What to do with birch sap after harvest: a recipe for a drink
Nutritionists say an adult can do it per day to drink 1-2 cups birch nectar without harm to health. If it is exceeded, you may experience allergies or disorders of the gastrointestinal tract. For the elderly and young children enough 0.5 cups a day.
There are only two ways to use birch sap:
- seasonal fresh;
- turned into a drink.
If you prefer the first option, don’t forget Birch sap shelf life – 4 days in a cool, dark place. If you want to make kvass, use the proven recipe:
- birch sap – 3 liters;
- honey or sugar – 150 g;
- Raisins – 30 gr.
You have to take a three-liter jar and pour sugar in it and then pour birch sap. Stir until sugar is completely dissolved and add raisins. Cut a piece of gauze, fold it in half, cover the jar and tie with a rubber band or rope. Then place the jar in a cool, dark place for 4-5 days. It is important not to forget to stir or shake the contents daily so that the product ferments properly.
When the drink is ready, you will feel a slight bittersweet taste and aroma; then you can remove the gauze, cover the jar with a lid and put it in the fridge for 1-2 days. If you want to pour into bottles, be careful: the gas inside the tanks can break the lid. This drink perfectly quenches thirst and saturates the body with vitamins.
