Yulia Pankova’s Perfect Easter Cake: Recipe

The New Channel presenter shares the recipe for the Easter cake she has been looking for for five years

Each housewife has her own recipe for Easter cakes, tested over time. But okay, sometimes you want to try something unusual. That’s why today’s New Channel presenter Yulia Pankova has prepared her recipe for the perfect Easter cake. Read and cook!

– I confess, I did not succeed in the Easter cake for the first time, – says Julia. – I tried to cook according to various recipes. But not everyone came out: they fell on me. I was upset, disappointed and told myself I wouldn’t cook next year. But then he kept experimenting again.

Julia was upset that people shared her recipes on the Internet, but she couldn’t guarantee that the Easter cake would come out.

“I’ve been looking for him for five years,” says the presenter. – It’s just a treasure, not a recipe. Easter cakes are very tasty. They are partly flames, that is the secret of their softness. And cardamom, which is added to the dough, makes the taste especially spicy. And yes, the Easter cakes according to this recipe will be a success for all housewives! I assure and recommend you as an “Inspector”.

The perfect Easter cake: recipe


1 kg of flour (sieve required),

200 g butter,

200 ml of 10% cream,

2 tablespoons honey (with slide),

10 eggs,

40 g of live yeast,

0.5 teaspoons. salt,

1 cup sugar,

30 g vanilla sugar,

a little ground cardamom, nutmeg and saffron-turmeric,

2-3 tablespoons. l. cognac or grand marnier,

300 g of raisins,

1 lemon peel,

120 ml of olive oil.

Easter: step-by-step recipe

Prepare the puree. In a small saucepan, melt 200 g butter, boil for about five minutes. Pour all the cream, stirring, bring to a boil. Add the honey, bring to a boil, stirring. Remove from the heat, add 200 g of sifted flour, stir vigorously to make all the flour. Put back on the heat and stir constantly to evaporate the moisture (1.5-2 minutes). Remove from heat and allow to cool slightly (about 20-25 minutes).

Add to the dough 2 eggs one at a time, carefully rubbing the dough until smooth.

Transfer this dough to a large bowl. Spread it with your hands, make a flat cake. Cool slightly and add the yeast to the center, wrap the edges and knead until the yeast dissolves (10-15 minutes). Beat the dough on the table 3 times. This will distribute the yeast well and the dough will absorb the air. Place the resulting gingerbread in a bowl, cover with plastic wrap and place in a warm place for 1.5-2 hours.

Prepare cupcakes and nuts. Mix 8 egg yolks with 0.5 teaspoons. salt and refrigerate. Beat well 8 proteins with 1 cup sugar and also cold.

Pour boiling water over the raisins for 15-20 minutes, toss in a colander and pat dry.

Mix in a separate bowl the vanilla sugar, the zest, the spices.

The dough came out. Knead it. Add 2 tbsp. l. flour, all spices, brandy, egg yolks and protein, 40 g vegetable oil (so that the strips do not harden), pour the remaining oil into the palm of your hand while kneading. The dough will be very thin, it will mix easily, and it must first be stirred well by hand until it is a homogeneous dough. You will see bubbles appear on the dough. It will be tender, a little sticky. Slowly, 3 tbsp. l., add flour, stirring each time. Knead well. The dough will be greasy and moderately dense, cut raw with a knife, slightly sticky. Cover with cling film and let stand for 2 hours in a quiet, warm place.

After the second cooking, knead the dough and add the nuts, mixing them carefully in the dough. Divide the finished dough on a floured table into parts (4-5) and place it on top of the shapes, cover with a towel and let it rise until it rises.

Place a container of baking water in the bottom baking tray. At the top – belts. Bake in the oven at 175 degrees for 25-30 minutes. When they start to blush, cover with parchment paper soaked in water. We wrap the finished Easter cakes in a towel so that they rest and cool. Decorate with cold.
